Ingredients:
– 1 large eggplant (baingan)
– 2-3 tablespoons oil
– 1 onion, finely chopped
– 2 tomatoes chopped
– 2-3 green chilies chopped
– 1-inch piece of ginger, grated
– 3-4 cloves of garlic, minced
– 1 teaspoon cumin seeds
– 1 teaspoon red chili powder
– 1 teaspoon coriander powder
– 1/2 teaspoon turmeric powder
– Salt to taste
– Fresh coriander leaves for garnish
– Optional: 1/2 teaspoon garam masala for added flavor
Instructions:
1. Begin by roasting the eggplant. You can do this over an open flame on a gas stove or by baking it in the oven at 200°C about 40-45 minutes until the skin is charred and the eggplant becomes soft. Rotate the eggplant occasionally to ensure even roasting.
2. After the eggplant has been cooked and remove the skin and then mash the pulp.
3. Add oil in a pan . Add cumin seeds and splutter.
4. Add chopped onions and sauté until they turn translucent.
5. Add grated ginger and minced garlic. Sauté for a couple of minutes until the raw smell disappears.
6. Add chopped green chilies and tomatoes. Cook until the tomatoes soft and the mixture thickens.
7. Add red chili powder, coriander powder, turmeric powder, and salt. Mix well and cook for a few more minutes.
8. Add the mashed eggplant to the pan and combine it with the spice mixture. Stir for 5-7 minutes, allowing the flavors to meld together.
9. If using garam masala, sprinkle it over the dish and mix well.
10. Garnish with fresh coriander leaves.
Serve Baingan Ka Bharta hot with naan, roti, or rice.
