– 1 cup Toor dal (split pigeon peas)
– 2 tomatoes, chopped
– 1 small onion, finely chopped
– 2-3 cloves garlic, minced
– 1-inch piece of ginger, grated
– 2-3 green chilies, slit
– 1 tsp mustard seeds
– 1 tsp cumin seeds
– half tsp turmeric powder
– half tsp red chili powder (adjust to taste)
– A pinch of asafoetida (hing)
– Few curry leaves
– 2 tbsp oil or ghee
– Salt to taste
– Chopped coriander leaves for garnish
– Lemon wedges (optional)
**Instructions:**
1. Rinse the toor dal thoroughly and soak it in water for 30 minutes. Drain and set aside.
2. Pressure cook the soaked dal with 2 cups of water, turmeric powder, chopped tomatoes, half of the chopped onions, half of the ginger, and salt. Simmer for approximately 3-4 whistles or until the lentils are soft and cooked through. It is soft and mushy.
3. Once the pressure is released, mash the dal mixture well. Adjust the water quantity to reach your preferred texture or thickness if necessary. Keep it aside.
4. heat oil or ghee over medium heat in a separate pan. Add mustard seeds and let them splutter. Then add cumin seeds, asafoetida, curry leaves, green chilies, minced garlic, and the remaining chopped onions and ginger.
5. Sauté until the onions turn golden brown.
6. Add red chili powder and sauté for a few seconds.
7. Pour the cooked dal into the tempering mixture and mix well. Let it simmer on low heat for 5-10 minutes, allowing the flavors to meld.
8. Adjust salt and spice levels according to your taste.
Finally, top it off with freshly chopped coriander leaves and serve while hot with steamed rice or chapati.
