Ingredients:
– 6-8 dried red chilies (adjust according to spice preference)
– 2 tablespoons coriander seeds
– 1 tablespoon cumin seeds
– 1-inch cinnamon stick
– 4-5 cloves
– 4-5 peppercorns
– 4-5 green cardamom pods
– 1 teaspoon fennel seeds
– 1 teaspoon Kashmiri red chili powder
– 1 teaspoon turmeric powder
– 1 teaspoon black salt
– 1 teaspoon salt (adjust to taste)
– 1 teaspoon sugar
Instructions:
1. Dry roast the whole spices (dried red chilies, coriander seeds, cumin seeds, cinnamon stick, cloves, peppercorns, green cardamom pods, and fennel seeds) in a pan on low heat until they become aromatic. Stir constantly to avoid burning.
2. transfer the spices to a plate once roasted and let them cool completely.
3. Grind the roasted spices along with the remaining powdered spices ( Kashmiri red chili powder, turmeric powder, black salt, regular salt, and sugar) in a spice blender until you get a fine powder.
4. Store the Dabeli masala in an airtight container in a cool, dry place.
This masala can be used to make Dabeli filling by mixing it with mashed potatoes, tamarind chutney, peanuts, and other ingredients, which are then stuffed into buns and served as a delicious snack.
