Pav bhaji

Ingredients:

– Potatoes (3 medium-sized, boiled and mashed)
– Tomatoes(3, finely chopped)
– Onion (2, finely chopped)
– Green Peas (1 cup)
– Capsicum (1, finely chopped)
– Cauliflower(1 cup, finely chopped)
– Butter (4-5 tablespoons)
– Pav Bhaji Masala (4 tablespoons)
– Turmeric Powder (1 teaspoon)
– Red Chili Powder (1 teaspoon)
– Salt (to taste)
– Coriander Leaves (for garnish)
– Lemon Wedges (for serving)
– Pav (Dinner Rolls)

Instructions:

1. Preparation:
Boil the potatoes , then peel and coarsely mash them.
– Finely chop all the vegetables (onion, tomatoes, capsicum, and cauliflower).

2. Cooking:
Warm butter in a large pan on medium heat. Sauté the chopped onions until they become translucent then tomatoes and cook until they soften and achieve a mushy texture.
– Mix in the chopped capsicum, carrots, cauliflower, and green peas. Stir well.

3. Seasoning:
– Add turmeric powder, red chili powder, pav bhaji masala, and salt. Mix all the spices with the vegetables.
– Mash the vegetables with a potato masher . Stir occasionally while mashing.

4. Incorporate Potatoes:
– Add the coarsely mashed potatoes to the vegetable mixture. Combine everything thoroughly.

5. Simmer:
– Let the pav bhaji simmer on low heat for 15-20 minutes. Stir occasionally to prevent sticking.

6. Garnish and Serve:
– Garnish with chopped coriander and butter.
– Serve the pav bhaji hot with lightly toasted pav (dinner rolls) and lemon wedges on the side.
