Vegetable pasta

Ingredients:
– Pasta (of your choice)
– Onion (1, diced)
– Garlic (3-4 cloves, minced)
– Ginger(1-inch piece, minced)
– Beans (a handful, any variety, chopped)
– Asparagus (4-5 spears, chopped)
– Broccoli (1 cup, chopped into florets)
– Mushrooms (1 cup, sliced)
– Capsicum (1, diced)
– Cherry Tomatoes (1 cup, halved)
– Olives (a handful, sliced)
– Jalapeño(1, finely chopped)
– Sun-dried Tomatoes (4-5 pieces, chopped)
– Artichoke Hearts (1 cup, chopped)
– Olive Oil (3-4 tablespoons)
– Salt and Pepper (to taste)
– Italian Seasoning (1 teaspoon)
– Red Chili Flakes (optional, for heat)
– Fresh Basil (for garnish)
– Grated Parmesan Cheese (optional for serving)
– Pasta Sauce(1-2 cups, as desired)

Instructions (with Pasta Sauce):

1. Boil the pasta in salted water. Following the package instructions until it reaches an al dente texture. Once done, drain it and set it aside for later use.

2. Sauté Aromatics and Vegetables:
Heat up olive oil in a sizable pan or skillet. On medium heat. Sauté onion, garlic, and ginger until fragrant. Add in the chopped asparagus, broccoli, beans, mushrooms, capsicum, cherry tomatoes, olives, jalapeño, sun-dried tomatoes, and artichoke hearts. Sauté for 5-7 minutes until the vegetables are tender.

3. Add Pasta Sauce:
– Pour the pasta sauce into the skillet with the sautéed vegetables. Stir well to combine, allowing the sauce to coat the vegetables evenly. Let it simmer for a few minutes to meld the flavors.

4. Season and Combine:
Flavor the vegetable and sauce blend with salt, pepper, Italian seasoning, and, if preferred, red chili flakes. Adjust the seasoning to your liking. Combine the cooked pasta with the mixture in the skillet, and delicately toss the pasta to ensure an even coating with the sauce and vegetables. Thoroughly with the sauce and vegetables.

5. Serve:
– Plate the vegetable pasta, garnish with fresh basil leaves, and optionally sprinkle grated Parmesan cheese on top before serving.
